BROCCOLI CHEESE SOUP
1 16oz pkg frozen chopped broccoli
1/2 cup shredded carrot
1/2 cup onion, chopped (I used more)
2 cups chopped potatoes
2 141/2 oz cans chicken broth
3 tbsp flour
2 1/2 cups milk
3/4- 1 lb Velveeta cubed
Simmer vegetables in broth 15 minutes. Mix flour into milk and add to cooked veggies. Cook and stir to thicken slightly, about 10 min. Add cheese, turn off heat, stir and cover till melted. Stir again and serve. So good.
