How did it get to be Thursday already? We have a habit in my classroom of celebrating Birthday Eve's (day before birthday), Thanksgiving Eve, Valentines Day Eve, St. Patrick's Day Eve, etc... So in my mind I'm thinking that today is Friday Eve. It's satisfying just to anticipate the event! What's more is that this could also be referred to as Leap Day Eve!! Now THAT'S exciting, it only happens every 4 years for goodness sake!!
Today's post is a salad that I love. It keeps for a long time, and it's fairly easy to make. Be sure to drain all of the cans before putting the ingredients in a large bowl for mixing.
TRASH SMASH SALAD
1 can white shoepeg corn
1 can garbanzo beans
1 can french cut green beans
1 jar sliced mushrooms
1 cup chopped or sliced celery
1 cup chopped or sliced green pepper
1 cup thinly sliced onion
1 jar diced pimento
1 1/2 cup raw cauliflower pieces
Heat and pour over above ingredients:
3/4 cup sugar
1/2 cup wine vinegar
1/2 cup oil
1 tsp. Lawry's seasoning salt
Refrigerate for several hours before serving.
Shake or stir occasionally to distribute dressing. D-lish!
